Love love! Gyoza with Lotus Roots Topping

Love love Gyozam🥟❣️Japanese way to call Chinese pan-fried dumplings. This time, Gyoza with Lotus Roots Topping.

In Chinese restaurants, I see more steamed / boiled dumplings, where in Japan we enjoy them often pan fried, with thinner skins.
A bit with ethnic & crunchy twist, with coriander & lotus roots on surface.

My usual filling: minced pork, cabbage, Chinese chives (garlicky), pureed garlic & ginger, oyster sauce, soy sauce, sesame oil, salt.
I added tomatoes, and replaced the pork with minced chicken. With Indian henna still clear on my hands (from the Hindu wedding in India), I didn’t feel right to cook pork / beef… yet.
Side dish, “bang bang cucumber salad” – in my previous reel, perfect match!!

Quick & easy recipe

  1. Prepare filling: chop chop cabbage & Chinese chives, salt a bit & mix. Later, drain. Mix well with pureed garlic, ginger, minced meat, and the rest of the condiments.
    💡Draining & mixing well with meat is the key!
  2. Skin & slice lotus roots, sautee in pan with some sesame oil, until half cooked.
    💡If you won’t cook them right away, put them in water – so that they don’t turn brown / gray
    💡 Slicing them thinner would be pretty too! Be careful not too cook too much, as it will lose its crunchiness.
  3. Wrap! Seal with starch diluted water. Place them on sliced lotus roots. Pour some sesame oil & starch water, put lid and cook in mid heat until cooked.
  4. Take off the lid, bake in high heat for ±30sec(for crisp surface), flip! Top with your likings(this time, coriander & sliced red onions)

Delicious, with soy sauce & chili oil. I also like the combo of vinegar with white pepper✨

餃子、それはソウルフード。
シンガポールの中華のお店で見かける餃子は、もちもち水餃子や蒸し餃子が主流な気がします。
シンガポールでの餃子

インドの結婚式で掌に入れてもらったヘナ、なんとなくまだ牛肉や豚肉を手にするには早い気がして、今回は鶏ひき肉餃子です。
歯ごたえ&見た目が楽しくなるので、厚めのレンコンを表面に。

ざっくりレシピ:
1.具材の準備。キャベツ&ニラをみじんにし、塩を振りかけ、少し置く。水気しっかり切り、ひき肉&すりおろし生姜・ニンニク&調味料とよくよく混ぜる(オイスターソース、ごま油、醤油、塩等)。今回はトマトも追加。
2.レンコンをスライス(薄くてもレースのように可愛らしいです)。ごま油で、さっと炒める(表面半透明になればOK)
3.餃子を包み、レンコンの上に敷き詰めていく。中〜強火にかけ、水溶き片栗粉を回し入れ、蓋。ごま油を最後鍋肌に沿わせて追加すると、カリッと!
4.お皿にひっくり返して。たっぷりパクチー&赤玉ねぎのスライスをトッピング
