What to Do with 100g of Leftover Blue Cheese? Try This Ottolenghi-Inspired Spicy Chicken Bake
A few months ago, I found myself wondering what on earth to do with 100 grams of leftover blue cheese sitting quietly in my fridge. I had posted a casual Instagram story about it, and to my delight, @r_schoofje came to the rescue with an irresistible suggestion: Ottolenghi’s spicy rotisserie chicken bake with blue cheese dressing. The recipe immediately caught my attention—it was full of flavor-packed ingredients, yet had a refreshing twist.
Fast forward to now, after months of the cheese hibernating in my freezer (thanks to a whirlwind of schedules), I finally remembered it—prompted by Rina’s recent posts about Roquefort. Inspired, I defrosted the cheese and gave the recipe my own spin.
The result? A delicious, Ottolenghi-inspired dish that turned out to be both comforting and exciting. I made a few tweaks based on what I had in my kitchen, but the spirit of the original remained. One unexpected hero ingredient for me was fresh coriander—its citrusy brightness added a layer of freshness that played beautifully with the creamy, spicy base.

🧀 Modified Ingredients Used:
Base bake: Sliced celery, garlic, quartered tomatoes, dry & fresh chilies, thinly sliced onion, rotisserie chicken (shredded), chopped coriander, spring onion, mozzarella
Blue cheese dressing: Blue cheese, lime juice, well-drained tofu, plain yogurt (instead of sour cream, cream cheese, and milk)
Yes, I was missing all the creamy elements Ottolenghi recommended (sour cream, cream cheese, milk), but my tofu-yogurt combination delivered a subtle creaminess without overpowering the blue cheese flavor. Texture-wise, I think tofu blended in seamlessly. I even threw in some potatoes—because, well, I needed to use them up and it turned out to be a great idea! Roasting them alongside the chicken allowed all the flavors to meld beautifully.
This bake is the kind of dish that feels indulgent yet fresh, thanks to lime juice, coriander, and celery. It’s perfect for anyone with extra blue cheese on hand and looking for a way to use it that doesn’t involve another boring salad or basic pasta.
Highly recommend giving it a try—with your own twist, of course. Who knows what ingredients you’ll end up loving most?
