Each item has wishes & meanings, I try to cook to make those points stand out✨
Today introducing “Yoro ebi (simmered prawns)” and “Date-maki (fish cake)”✨
Quick recipes (arranged to be easier) & Stories🦐🥚
■”Yoro ebi”🦐
Deeply curved prawns symbolizes long life (“養老”, yoro) like “until your back bends”, resembling a man with long beard & bent back🦐
I was unsure if the black local prawns would turn red in the end… so bought another type just in case, but they turned out beautiful red🥰❣️
- Prepare prawns- take out the vein with toothpick (or thinner equipment), cut the long beard.
- Boil 1/2 cup of water & 2 tbs of sake in pot, add the prawns – make sure to curl them, assisting with chopsitics. Take off any foams.
- When color changes, add 1TBS light soy sauce, 1.5TBS sugar, and 1TBS Mirin(or +2ts of sugar). Boil in medium heat with lid for 4-5 min and let it rest🦐💤
■”Date Maki” 🥚
This one was liked by my foreign friends.
“Date/伊達” = gorgeous, and “Maki /巻” = old books – symbol of cultural richness. Better if baked the side much brown- so Naruto-ish swirl would stand out even more🥲🌀
- Mix Hanpen (white Japanese fish cake), eggs (6-8), Sugar (110g), Sake 1.5TBS, Light Soy 0.5Tbs, Mirin 1TBS, Honey 1.5Tbs, and pour in tray with cooking sheet.
- Heat oven to 200℃, bake one side 15min, then flip & other side 10min or so – until golden on surface but still moist.
3.Roll them with “Oni-sudare (demon roll)” – spikes a bit bigger than sushi sudares (works with them too), band and let it rest. Make sure to rest them on trays, as some juice can fall. When cool, wrap in plastic & put in fridge. - Good in 1-2 days, taste sets in😋
