Bang Bang, Xi’an style Cucumber & Chicken Salad.
I wanted a side dish with some Asian/Chinese feels to match the meal- and I remembered I saved a very nice one from Julia-san (@julia_with_a_good_appetite ), from her March 26th post.
I am so so amazed with her hard core approach in authentic Chinese cooking… many times I can’t tell if it’s a dine out or her cooking (usually the latter case).

How to, and some points
The salad was delicious! I am sure this will be one of my new go-to side dishes.
Fresh crunchy cucumbers, and sesame oil & pureed garlic!
I added some pulled chicken (steamed), and chili from kimchi projects.
This salad will not be the same if you had clean sliced cucumbers – as in Julia-san’s caption: “uneven nooks will catch the spices”.
As I didn’t have heavy butcher knife to do this, I used my wooden mortar pestle to bang bang not the chicken but the cucumbers.
※Local cucumbers in Singapore is much bigger and juicy centered than what I can find in Japan- I felt “mottainai” (Japanese sense of regret over waste)… I just included them in the sauce too. It was absorbed nicely in the chicken.
※POINT: Always add flavors to proteins first before mixing with veggies! Or else, it will taste bland.
※POINT:So true for the chickens too- it would not flavor the same if you cut it with knives, pull! or Bang bang! Cooking could be science, but more love!! (I so agree with Julia-san’s profile!)
[Japanese] アジアンな副菜、バンバンチキンきゅうりサラダ✨
助かる副菜！バンバンきゅうりサラダです。
中華なメインディッシュに合わせて、以前保存していた方のレシピにトライしてみました。
おろしにんにく・塩・砂糖・お酢・黒ごま油・ラー油・とうがらし系の味付けです。
きゅうりはスライサーや包丁できれいに切るとあまり沁みないため、バンバン！しています（ポリ袋があると片付けが楽ちんです）。
シンガポールのローカルスーパーにあるきゅうり、”Japanese cucumber”と書かれている割に、日本で見たことのないジャイアントサイズ＆ジューシーな種たっぷりです。
なんだかそのまま真ん中を捨てるのももったいないなと思い、使ってしまいました（青臭さはあまりありません）。
蒸し鶏が良い感じに吸収して、ジュースィ―になってくれました。
ところで、この蒸し鶏を割く作業。
本当に、本当に、面倒だなといつも思い、いつも先生方に、他に方法がないか聞いたりしていたのですが、やっぱりこの手間暇が差なのだと納得しています。
料理は化学かもしれないけれど、でも、やっぱり愛情！と信じたいのです。
