Woww…..already December!!!
Not too religious, but when I was in Tokyo, I used to visit my neighborhood shrine on the first day of each month to kind of send gratitude & wishes to my everyday life⛩️✨
Now in Singapore- I try to have some routine meditation moment… by sharpening my knives.
So here we go✨
Quick idea:
I usually have these items to start with:
- Scotch brite; Extra tough scrub pads
- Hard eraser type scrub
- Rough sharpener brick
- Finer sharpener brick
For sharpening….
- Dip & wet the sharpening bricks(10-30 min)
- First, sharpen the knives with rough sharpener brick (blue one for me), give it some angles, and several ways back and forth… Not too much, we don’t want to shave the knives.
- Sharpen with finer brick (brown one for me), with some angle- this one, you can do as long as you want…. like 10 min, 20 min… if you have time. I’d do for around 5min or so per knife. Make sure to wet the stone once in a while – the powdery brown water is what you need to grind with, to sharpen the knives – don’t wash it away.
Tips
💡It’s said- angles should be around the thickness of coins – Euro / 25cent USD
💡Those brown water…. it really can damage your cutting boards/ towels / fingers – so make sure you don’t use your best boards/towels, and wear gloves….✨

もう師走!シンガポールに移って1.5年程です…!
日本にいたころは近所の気持ちの良い神社に朔日参りしていたのですが、そんな心改まるルーティンとして、こちらでは自己流ながら包丁を研いでおります😇
包丁に関しては、ステンレスもよいのですが、 鋼はやっぱり、切れ味に深みがある気がします。
ただ、笑っちゃうくらいすぐ錆びちゃうのです(レンコン等切ったら、10秒以内にサビ始めます…びっくりですよね…)😂
ポイント:
💡砥石のドロドロした研ぎ汁、爪先や指やまな板やタオルに沈着するので、お気を付けください(百均のまな板やゴム手袋)
💡サビトールという消しゴム的なの、サビがすぐに取れます。鋼の包丁には毎回使っていますが、本当に助かります。
