Last month in Tokyo, I found myself in a reunion I hadn’t even planned for. It was one of those spontaneous yet serendipitous nights, where everything aligns – even the place. A group of my closest friends gathered at an unexpected spot: an Arabian restaurant tucked inside the Tokyo Metropolitan Gymnasium.
From the outside, it looked like any other public sports facility. But inside, it felt like something else entirely. Airy. Calm. Surreal, even. A quiet hideaway with modernist curves and soft echoes of empty space. It didn’t feel like Tokyo at all.
The menu was equally surprising. We ordered koshari, dukkah potatoes, camel kebabs. The drink list was impressively global too – Japanese draft beer, Turkish Efe, Lebanese and Israeli wines. And yet, I made a very sober choice to start: lemon mint juice.
I had been so thirsty that evening that a cool, citrusy drink sounded better than alcohol. And oh—was it refreshing! Sweet, tart, herbal. It hit every note. I ended up drinking five or six glasses while everyone else sipped on wine and beer. And not once did I miss the alcohol.
Bringing it back to Singapore: leftover mint, meet your match
Lately, I’ve been making watermelon granita at home in Singapore (the heat demands it), and that often leaves me with extra mint. This drink has become the perfect solution. It’s quick, it’s bright, and it tastes like a soft reset button.
You don’t need anything fancy—just a blender and a tall glass.

Recipe: Lemon Mint Juice (for 1 tall glass)
Ingredients
- A generous handful of fresh mint leaves
- Juice of half a lemon
- 1 to 2 tablespoons honey (adjust to taste)
- Cold water (around 200ml)
- Crushed ice (optional)
Steps
- Wash the mint thoroughly.
- Add mint, lemon juice, honey, and cold water to a blender.
- Blend until smooth and lightly frothy.
- Pour over crushed ice if using. Serve immediately.
The result is a vivid green, slightly slushy juice that feels both comforting and energizing. Try it once, and you may find yourself skipping your usual wine for it—just like I did that night in Tokyo.

日本に帰省していた先月、大好きな友人たちと偶然再会できることに。急遽の集合場所は、なんと東京体育館の中にあるアラビアンレストラン。まるで秘密基地のような、不思議と落ち着く空間でした。
コシャリ、デュカポテト、らくだのケバブと、珍しいメニューにわくわくしながら、最初に頼んだのは意外にも「レモンミントジュース」。
喉が渇きすぎて、乾杯のビールよりも先に身体が求めた一杯。飲んでみたら、もう、これが驚くほど美味しくて… 気づけば6杯近く飲んでいたかも?笑
シンガポールに戻ってからは、スイカのグラニテ作りで余ったミントの活用にもぴったりということで、我が家の定番に。
覚書レシピ
ミントの葉たくさん+レモン果汁(1/2個分)+ハチミツ 大さじ1~2+冷たい水 約200ml
→ハンドブレンダーやミキサーでブーン!氷を入れても爽快です。
