The result? A delicious, Ottolenghi-inspired dish that turned out to be both comforting and exciting. I made a few tweaks based on what I had in my kitchen, but the spirit of the original remained. One unexpected hero ingredient for me was fresh coriander—its citrusy brightness added a layer of freshness that played beautifully with the creamy, spicy base.

Base bake: Sliced celery, garlic, quartered tomatoes, dry & fresh chilies, thinly sliced onion, rotisserie chicken (shredded), chopped coriander, spring onion, mozzarella
Blue cheese dressing: Blue cheese, lime juice, well-drained tofu, plain yogurt (instead of sour cream, cream cheese, and milk)
Yes, I was missing all the creamy elements Ottolenghi recommended (sour cream, cream cheese, milk), but my tofu-yogurt combination delivered a subtle creaminess without overpowering the blue cheese flavor. Texture-wise, I think tofu blended in seamlessly. I even threw in some potatoes—because, well, I needed to use them up and it turned out to be a great idea! Roasting them alongside the chicken allowed all the flavors to meld beautifully.
This bake is the kind of dish that feels indulgent yet fresh, thanks to lime juice, coriander, and celery. It’s perfect for anyone with extra blue cheese on hand and looking for a way to use it that doesn’t involve another boring salad or basic pasta.

オットレンギのスパイシーチキンレシピをアレンジ!ブルーチーズ豆腐ドレッシングで爽やかに
「ブルーチーズ、100g残ってるんだけど…どうしよう」
そんなぼやきをストーリーズでつぶやいたところ、友人がオットレンギ氏の素敵なレシピをシェアしてくれました。
「スパイシーなローストチキンのブルーチーズドレッシング添え」。
材料を見ただけで、もう間違いなく美味しそう。
本格派はチキンから焼くのかもしれませんが、今回は市販のローストチキンを活用しました。
🍽 主な材料:
セロリ&玉ねぎスライス、にんにく、トマト、ローストチキン(450gほどを割いたもの)
パクチー、ねぎ、モッツァレラ、乾燥唐辛子
ドレッシングには:
★サワークリーム
★クリームチーズ
★牛乳
ライム果汁
ブルーチーズ
ところが今回は、★印の材料がすべて手元になく…。
代わりに水切りした絹ごし豆腐を使用してドレッシングに(ついでに余っていたジャガイモもIN。笑)
見た目よりあっさり仕上がりましたが、豆腐のなめらかさとブルーチーズのコクが意外にも好相性。
そこにライムやセロリ、パクチーの爽やかさが加わり、ボリュームはあるのに重すぎない、楽しい味わいでした。
